How to Grow Beet Microgreens Hydroponically

Beet microgreens are vibrantly red-stemmed with earthy beet flavor — a striking garnish and a nutritional powerhouse. Full hydroponic guide.

Quick answer

Beet microgreens (Beta vulgaris) reach harvest in 12–18 days from seed at pH 6.0, EC 0.8, DLI 10–12, and air 18–24 °C. Striking red-purple stems with earthy beet flavor — visually distinctive and nutritionally dense. Best on hemp mats in 1020 trays.

What's unique about beet microgreens

Three traits set them apart:

  • Multigerm seeds. Each beet "seed" is a fruit cluster containing 2–4 embryos. All germinate, creating natural density even at thin seeding rates.
  • Slowest microgreen. 12–18 days vs 7–14 for others. Plan accordingly.
  • Visual impact. Deep red-purple stems with bright green cotyledons. Among the most photogenic microgreens.

The workflow

Same as other microgreens. Beet-specific notes:

  • Soak time: 12–24 hours. Beet seeds benefit from long soak.
  • Seeding density: thinner. Because each seed produces 2–4 shoots, use about half the seed-per-tray of other microgreens.
  • Dark phase: 3 days.
  • Light phase: 9–15 days.

Variety picks

  • Bull's Blood — deepest red-purple stems, classic microgreen variety.
  • Detroit Dark Red — also vibrant, slightly milder.
  • Chioggia — pink-and-white striped stems, unique visual.
  • Golden Detroit — yellow stems, mild flavor.

For maximum visual impact, plant Bull's Blood.

Light and temperature

  • Air 18–24 °C.
  • DLI 10–12. Slightly higher DLI (14) intensifies red pigment.
  • Photoperiod 16 hours.
  • Humidity 50–70%.

Nutrients

Same dilute approach: 0.6–0.8 EC after dark phase.

Common problems

  • Uneven heights — natural with multigerm seeds. Some shoots emerge later. Wait for the latest before harvesting.
  • Pale stems (less red) — insufficient light. Raise DLI.
  • Slow germination — old seed or insufficient soak time.
  • Damping off — fungal. Reduce humidity; improve airflow.

Harvest

Cut at media line when shoots are 5–10 cm tall and cotyledons are expanded. Rinse, spin-dry, refrigerate. Keeps 5–7 days.

FAQ

4 entries
Q01What variety produces the reddest stems?
Bull's Blood beet seed produces the deepest red-purple stems. Detroit Dark Red is also good. Regular table beet seed produces less intense color.
Q02How long until harvest?
12–18 days. Slower than radish, similar to pea shoots.
Q03Are beet microgreens hard to grow?
Moderate. Beet seeds are "multigerm" — each seed is actually a cluster of 2–4 embryos that all germinate, creating dense competition. Spread seed less densely than for other microgreens.
Q04Can beet microgreens substitute for beet greens?
Mostly. The microgreen flavor is more concentrated and the texture more tender. Use 1/3 as much as you would mature beet greens.
